  • Baking powder - 5 grams
  • Baking soda - 2 grams
  • Salt - 1 gram
  • Coconut oil (melted) - 30 grams
  • Egg - 1 large
  • Milk (dairy or non-dairy) - 50 ml
  • Ground cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, mix the pumpkin puree, melted coconut oil, egg, milk, and vanilla extract until well combined.
