Ingredients

  • Cooked jasmine rice - 2 cups (about 300g)
  • Pork tenderloin, thinly sliced - 200g
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Carrot, diced - 1 small
  • Green peas - 1/2 cup
  • Green onion, chopped - 2 stalks
  • Eggs - 2 large
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, marinate the sliced pork with 1 tablespoon of soy sauce and a pinch of black pepper for about 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry until cooked through, about 5 minutes. Remove and set aside.
  3. In the same skillet, add sesame oil and sauté garlic and ginger until fragrant, about 30 seconds.
  4. Add the diced carrot and green peas, stir-frying for another 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  6. Add the cooked jasmine rice and the remaining tablespoon of soy sauce to the skillet. Stir well to combine all ingredients and heat through, about 2-3 minutes.
  7. Return the cooked pork to the skillet, add chopped green onions, and stir to combine. Season with salt and pepper to taste.
