- Cooked jasmine rice - 2 cups (about 300g)
- Pork tenderloin, thinly sliced - 200g
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Carrot, diced - 1 small
- Green peas - 1/2 cup
- Green onion, chopped - 2 stalks
- Eggs - 2 large
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, marinate the sliced pork with 1 tablespoon of soy sauce and a pinch of black pepper for about 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry until cooked through, about 5 minutes. Remove and set aside.
- In the same skillet, add sesame oil and sauté garlic and ginger until fragrant, about 30 seconds.
- Add the diced carrot and green peas, stir-frying for another 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked jasmine rice and the remaining tablespoon of soy sauce to the skillet. Stir well to combine all ingredients and heat through, about 2-3 minutes.
- Return the cooked pork to the skillet, add chopped green onions, and stir to combine. Season with salt and pepper to taste.
