- Duck breast - 400 grams
- Salt - 1 teaspoon
- Five-spice powder - 1 teaspoon
- Rice vinegar - 2 tablespoons
- Gluten-free hoisin sauce - 3 tablespoons
- Gluten-free flour (rice flour) - 1 cup
- Water - 1/3 cup
- Sesame oil - 1 tablespoon
- Cucumber - 50 grams, julienned
- Spring onions - 50 grams, sliced
Steps
- Preheat the oven to 200°C (400°F).
- Score the skin of the duck breast in a crisscross pattern and rub salt and five-spice powder into the skin and meat.
- Place the duck breast skin-side up on a wire rack over a roasting pan and roast in the preheated oven for 30-35 minutes, or until the skin is crispy.
- While the duck is roasting, mix rice vinegar with gluten-free hoisin sauce in a small bowl and set aside.
- In a separate bowl, combine gluten-free flour and water to create a dough. Knead until smooth, then divide into 4 equal pieces.
- Roll each piece into a thin pancake and cook each pancake in a non-stick skillet over medium heat for 1-2 minutes per side until lightly golden. Keep warm.
- Once the duck is cooked, let it rest for 10 minutes before slicing thinly.
- To serve, spread some hoisin sauce on a pancake, add slices of duck, cucumber, and spring onions, then roll it up and enjoy.
