Ingredients

  • Gluten-free rice noodles - 100 grams
  • Chicken or vegetable broth - 500 ml
  • Fresh ginger - 1 tablespoon, minced
  • Garlic - 1 clove, minced
  • Green onions - 2, chopped
  • Carrot - 1 small, julienned
  • Bok choy - 100 grams, chopped
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Cilantro - for garnish

Steps

  1. In a medium pot, bring the chicken or vegetable broth to a boil over medium heat.
  2. Add the minced ginger and garlic to the broth and simmer for 5 minutes to infuse the flavors.
  3. Add the julienned carrot and chopped bok choy to the broth, and cook for another 3-4 minutes until the vegetables are tender.
  4. While the vegetables are cooking, prepare the gluten-free rice noodles according to package instructions, then drain and set aside.
  5. Once the vegetables are cooked, stir in the gluten-free soy sauce and sesame oil, and season with salt and pepper to taste.
  6. Divide the cooked rice noodles between two bowls and ladle the hot broth and vegetables over the noodles.
  7. Garnish with chopped green onions and cilantro, and serve immediately.
