- Pork tenderloin - 250 grams, thinly sliced
- Carrot - 1 medium, julienned
- Shiitake mushrooms - 100 grams, sliced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Gluten-free soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Cornstarch - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Gluten-free rice paper wraps - 4
- Fresh cilantro - for garnish
Steps
- In a bowl, combine the sliced pork with gluten-free soy sauce, cornstarch, salt, and pepper. Let it marinate for 10 minutes.
- Heat sesame oil in a skillet over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add the marinated pork to the skillet and cook for about 5-7 minutes, or until browned and cooked through.
- Stir in the carrots and shiitake mushrooms, and cook for another 5 minutes until the vegetables are tender.
- Add the chopped green onions and rice vinegar, and cook for an additional 2 minutes.
- Soak the rice paper wraps in warm water for about 10 seconds until pliable. Lay them flat on a clean surface.
- Spoon a portion of the pork and vegetable mixture onto the lower third of each rice paper wrap. Fold the sides in and roll tightly to enclose the filling.
- Serve immediately, garnished with fresh cilantro.
