Ingredients
- Gluten-free pizza crust - 1 medium (about 250g)
- Firm tofu - 200g, drained and crumbled
- Ground pork or beef - 100g
- Sichuan peppercorns - 1 tsp
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, minced
- Doubanjiang (spicy broad bean paste) - 1 tbsp
- Soy sauce (gluten-free) - 1 tbsp
- Cornstarch - 1 tsp
- Spring onions - 2, chopped
- Shredded mozzarella cheese - 100g
- Sesame oil - 1 tsp
- Vegetable oil - 1 tbsp
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (430°F).
- In a large skillet, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and stir-fry for 30 seconds until fragrant.
- Add the minced garlic and ginger to the skillet and sauté for another minute until aromatic.
- Add the ground pork or beef to the skillet, breaking it up with a spatula. Cook until browned, about 5 minutes.
- Stir in the crumbled tofu and cook for an additional 5 minutes, mixing well.
- Add the doubanjiang, soy sauce, cornstarch, and season with salt and black pepper. Mix well and cook for another 2-3 minutes until everything is well combined.
- Remove the skillet from heat and fold in the chopped spring onions.
- Place the gluten-free pizza crust on a baking sheet. Spread the Mapo tofu mixture evenly over the crust.
- Sprinkle shredded mozzarella cheese on top of the Mapo tofu mixture.
- Drizzle sesame oil over the pizza and bake in the preheated oven for about 12-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let it cool slightly, slice, and serve hot.
