Ingredients

  • Gluten-free pizza crust - 1 medium (about 250g)
  • Firm tofu - 200g, drained and crumbled
  • Ground pork or beef - 100g
  • Sichuan peppercorns - 1 tsp
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, minced
  • Doubanjiang (spicy broad bean paste) - 1 tbsp
  • Soy sauce (gluten-free) - 1 tbsp
  • Cornstarch - 1 tsp
  • Spring onions - 2, chopped
  • Shredded mozzarella cheese - 100g
  • Sesame oil - 1 tsp
  • Vegetable oil - 1 tbsp
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (430°F).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and stir-fry for 30 seconds until fragrant.
  3. Add the minced garlic and ginger to the skillet and sauté for another minute until aromatic.
  4. Add the ground pork or beef to the skillet, breaking it up with a spatula. Cook until browned, about 5 minutes.
  5. Stir in the crumbled tofu and cook for an additional 5 minutes, mixing well.
  6. Add the doubanjiang, soy sauce, cornstarch, and season with salt and black pepper. Mix well and cook for another 2-3 minutes until everything is well combined.
  7. Remove the skillet from heat and fold in the chopped spring onions.
  8. Place the gluten-free pizza crust on a baking sheet. Spread the Mapo tofu mixture evenly over the crust.
  9. Sprinkle shredded mozzarella cheese on top of the Mapo tofu mixture.
  10. Drizzle sesame oil over the pizza and bake in the preheated oven for about 12-15 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, let it cool slightly, slice, and serve hot.
