Ingredients
- Soft tofu - 300 grams
- Ground pork (or beef) - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2, chopped
- Fermented black beans - 1 tablespoon, rinsed and mashed
- Doubanjiang (spicy bean paste) - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Cornstarch - 1 tablespoon
- Water - 150 ml
- Chili oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Press the soft tofu for 10 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a pan over medium heat, add the chili oil and ground pork (or beef). Cook until browned, about 5-7 minutes.
- Add minced garlic, ginger, and green onions (reserve some green onion for garnish) to the pan and sauté for 1-2 minutes until fragrant.
- Stir in the mashed fermented black beans and doubanjiang, cooking for another 2 minutes.
- Add gluten-free soy sauce, rice vinegar, and water to the pan. Stir well and bring to a simmer.
- Gently add the tofu cubes to the sauce, being careful not to break them. Simmer for 5 minutes to heat the tofu through.
- Mix cornstarch with a small amount of water to create a slurry, then add it to the pan to thicken the sauce. Stir gently until the sauce thickens, about 2 minutes.
- Season with salt and pepper to taste. Drizzle with sesame oil before serving.
- Serve hot, garnished with reserved green onions.
