Ingredients
- Gluten-free all-purpose flour - 200g
- Butter - 50g (melted)
- Sugar - 30g
- Water - 60ml
- Lotus seed paste - 100g
- Sesame seeds - 10g (for topping)
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the gluten-free flour, melted butter, sugar, and a pinch of salt.
- Gradually add water to the flour mixture, stirring until a dough forms. Knead gently for about 2 minutes until smooth.
- Wrap the dough in plastic wrap and let it rest for 15 minutes.
- While the dough is resting, prepare the filling by ensuring the lotus seed paste is smooth and pliable.
- Divide the dough into 4 equal pieces and roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of lotus seed paste in the center of each circle, then fold the dough over to encase the filling and pinch to seal.
- Gently flatten each pastry and place them on a baking sheet lined with parchment paper.
- Sprinkle sesame seeds over the top of each pastry.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Allow to cool slightly before serving.
