Ingredients

  • Gluten-free all-purpose flour - 200g
  • Butter - 50g (melted)
  • Sugar - 30g
  • Water - 60ml
  • Lotus seed paste - 100g
  • Sesame seeds - 10g (for topping)
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the gluten-free flour, melted butter, sugar, and a pinch of salt.
  3. Gradually add water to the flour mixture, stirring until a dough forms. Knead gently for about 2 minutes until smooth.
  4. Wrap the dough in plastic wrap and let it rest for 15 minutes.
  5. While the dough is resting, prepare the filling by ensuring the lotus seed paste is smooth and pliable.
  6. Divide the dough into 4 equal pieces and roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of lotus seed paste in the center of each circle, then fold the dough over to encase the filling and pinch to seal.
  8. Gently flatten each pastry and place them on a baking sheet lined with parchment paper.
  9. Sprinkle sesame seeds over the top of each pastry.
  10. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  11. Allow to cool slightly before serving.
