- Bok choy, chopped - 200 grams
- Chicken broth - 500 milliliters
- Cornstarch - 1 teaspoon (optional, for thickening)
Steps
- In a bowl, combine ground pork, gluten-free soy sauce, sesame oil, minced ginger, minced garlic, green onion, gluten-free breadcrumbs, egg, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Form the mixture into 4 equal meatballs and set aside.
- In a large pot, bring the chicken broth to a simmer over medium heat.
- Gently add the meatballs to the simmering broth and cook for about 10 minutes, turning occasionally until they are cooked through.
- Add the chopped bok choy to the pot and simmer for an additional 5 minutes until the greens are tender.
- If you prefer a thicker broth, mix cornstarch with a little water to create a slurry and stir it into the pot. Cook for another minute until the broth thickens slightly.
- Serve the meatballs and bok choy in bowls, ladling the broth over the top, and garnish with additional chopped green onion if desired.
