  • Soy sauce (gluten-free) - 1 tbsp
  • Sesame oil - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Fresh cilantro - a handful, chopped
  • Optional protein (tofu or cooked chicken) - 100g, diced

Steps

  1. In a mixing bowl, combine the gluten-free rice flour, water, salt, and black pepper to create a smooth batter.
  2. Heat a non-stick skillet over medium heat and add a small amount of sesame oil.
  3. Pour a ladleful of the batter into the skillet and swirl to create a thin, even layer. Cook for about 2-3 minutes or until the edges start to lift.
  4. Crack an egg over the crepe and quickly spread it out to cover the surface, then sprinkle with green onion, grated carrot, and optional protein.
  5. Cook for another 2-3 minutes until the egg is set and the crepe is crispy.
  6. Carefully fold the crepe in half and slide it onto a plate. Repeat the process for the second serving.
