- Black pepper - 1/4 tsp
- Fresh cilantro - a handful, chopped
- Optional protein (tofu or cooked chicken) - 100g, diced
Steps
- In a mixing bowl, combine the gluten-free rice flour, water, salt, and black pepper to create a smooth batter.
- Heat a non-stick skillet over medium heat and add a small amount of sesame oil.
- Pour a ladleful of the batter into the skillet and swirl to create a thin, even layer. Cook for about 2-3 minutes or until the edges start to lift.
- Crack an egg over the crepe and quickly spread it out to cover the surface, then sprinkle with green onion, grated carrot, and optional protein.
- Cook for another 2-3 minutes until the egg is set and the crepe is crispy.
- Carefully fold the crepe in half and slide it onto a plate. Repeat the process for the second serving.
