Ingredients

  • Gluten-free sweet rice flour - 100g
  • Water - 120ml
  • Granulated sugar - 30g
  • Red bean paste - 100g
  • Sesame seeds - 50g
  • Cooking oil - for deep frying (approx. 500ml)

Steps

  1. In a mixing bowl, combine the gluten-free sweet rice flour and granulated sugar.
  2. Gradually add water to the flour mixture, stirring until a smooth dough forms.
  3. Cover the dough and let it rest for about 10 minutes.
  4. Divide the dough into 4 equal portions and flatten each portion into a disc.
  5. Place a tablespoon of red bean paste in the center of each disc and fold the dough over to encase the filling, pinching the edges to seal.
  6. Roll each filled ball in sesame seeds until fully coated.
  7. In a deep pan or pot, heat the cooking oil over medium heat until it reaches 170°C (340°F).
  8. Carefully add the sesame-coated balls into the hot oil, frying them in batches for about 4-5 minutes or until golden brown and crispy.
  9. Remove the Jian Dui from the oil and drain on paper towels to absorb excess oil.
  10. Serve warm and enjoy your homemade Gluten-Free Jian Dui!
