Ingredients
- Gluten-free sweet rice flour - 100g
- Water - 120ml
- Granulated sugar - 30g
- Red bean paste - 100g
- Sesame seeds - 50g
- Cooking oil - for deep frying (approx. 500ml)
Steps
- In a mixing bowl, combine the gluten-free sweet rice flour and granulated sugar.
- Gradually add water to the flour mixture, stirring until a smooth dough forms.
- Cover the dough and let it rest for about 10 minutes.
- Divide the dough into 4 equal portions and flatten each portion into a disc.
- Place a tablespoon of red bean paste in the center of each disc and fold the dough over to encase the filling, pinching the edges to seal.
- Roll each filled ball in sesame seeds until fully coated.
- In a deep pan or pot, heat the cooking oil over medium heat until it reaches 170°C (340°F).
- Carefully add the sesame-coated balls into the hot oil, frying them in batches for about 4-5 minutes or until golden brown and crispy.
- Remove the Jian Dui from the oil and drain on paper towels to absorb excess oil.
