  • Baking powder - 1 teaspoon

  • Xanthan gum - 1/2 teaspoon
  • Unsweetened shredded coconut - 50 grams
  • Coconut oil - 30 grams
  • Water - 50 ml
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the gluten-free all-purpose flour, coconut sugar, baking powder, salt, and xanthan gum.
  3. In another bowl, mix the coconut milk, melted coconut oil, water, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  5. Fold in the shredded coconut until evenly distributed in the dough.
  6. Divide the dough into 4 equal portions and shape each portion into a bun.
  7. Place the buns on the prepared baking tray, leaving some space between them.
