  • Honey - 1 tablespoon
  • Chili flakes - 1/2 teaspoon (optional)

  • Black pepper - to taste
  • Skewers (soaked in water for 30 minutes) - 4-6 pieces

Steps

  1. In a bowl, mix coconut milk, gluten-free soy sauce, ground turmeric, ground coriander, garlic powder, ginger paste, lime juice, salt, and black pepper to create a marinade.
  2. Add the chicken strips to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. While the chicken is marinating, prepare the peanut sauce by whisking together peanut butter, honey, lime juice, and chili flakes in a small bowl. Add a splash of water to reach your desired consistency.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated chicken strips onto the soaked skewers.
  6. Grill the chicken skewers for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
