- Cooked jasmine rice - 2 cups
- Chicken breast - 200 grams, diced
- Peas - 1/2 cup
- Carrot - 1 medium, diced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil, then add minced garlic, diced carrot, and peas. Stir-fry for about 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten egg into the empty side. Scramble the egg until fully cooked, then mix it with the vegetables.
- Add the cooked chicken back to the skillet along with the cooked jasmine rice, gluten-free soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for an additional 3-4 minutes until heated through.
- Finally, add the chopped green onion, stir well, and serve hot.
