Ingredients

  • Cooked jasmine rice - 2 cups
  • Chicken breast - 200 grams, diced
  • Peas - 1/2 cup
  • Carrot - 1 medium, diced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil, then add minced garlic, diced carrot, and peas. Stir-fry for about 3-4 minutes until the vegetables are tender.
  4. Push the vegetables to one side of the skillet and pour the beaten egg into the empty side. Scramble the egg until fully cooked, then mix it with the vegetables.
  5. Add the cooked chicken back to the skillet along with the cooked jasmine rice, gluten-free soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for an additional 3-4 minutes until heated through.
  6. Finally, add the chopped green onion, stir well, and serve hot.
