- Cooked jasmine rice - 2 cups
- Chicken breast, diced - 150 grams
- Firm tofu, diced - 150 grams
- Green onions, chopped - 2 tablespoons
- Carrot, diced - 1 small
- Frozen peas - 1/2 cup
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the diced tofu and cook until golden and crispy on all sides, about 5-6 minutes. Remove and set aside with the chicken.
- Add a little more oil if needed, then sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the diced carrot and frozen peas to the skillet and stir-fry for another 3-4 minutes until the vegetables are tender.
- Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
- Return the cooked chicken and tofu to the skillet, and pour in the gluten-free soy sauce and sesame oil. Stir-fry everything for another 2-3 minutes until heated through.
- Season with salt and black pepper to taste, and sprinkle with chopped green onions before serving.
