Ingredients

  • Cooked jasmine rice - 2 cups
  • Chicken breast, diced - 150 grams
  • Firm tofu, diced - 150 grams
  • Green onions, chopped - 2 tablespoons
  • Carrot, diced - 1 small
  • Frozen peas - 1/2 cup
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the diced tofu and cook until golden and crispy on all sides, about 5-6 minutes. Remove and set aside with the chicken.
  4. Add a little more oil if needed, then sauté the minced garlic and ginger until fragrant, about 1 minute.
  5. Add the diced carrot and frozen peas to the skillet and stir-fry for another 3-4 minutes until the vegetables are tender.
  6. Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
  7. Return the cooked chicken and tofu to the skillet, and pour in the gluten-free soy sauce and sesame oil. Stir-fry everything for another 2-3 minutes until heated through.
  8. Season with salt and black pepper to taste, and sprinkle with chopped green onions before serving.
