- Chicken breast - 250 grams, sliced thinly
- Button mushrooms - 150 grams, sliced
- Broccoli florets - 100 grams
- Red bell pepper - 1 medium, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Water - 100 milliliters
- Green onions - 2, chopped (for garnish)
- Sesame seeds - 1 teaspoon (for garnish)
Steps
- In a bowl, combine sliced chicken breast with cornstarch and 1 tablespoon of gluten-free soy sauce. Toss to coat evenly and let marinate for 10 minutes.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 5-7 minutes until cooked through and golden brown. Remove chicken from the skillet and set aside.
- In the same skillet, add sesame oil, garlic, ginger, and stir-fry for about 30 seconds until fragrant.
- Add sliced mushrooms, broccoli florets, and red bell pepper to the skillet. Stir-fry for another 3-4 minutes until vegetables are tender but still crisp.
- Return the cooked chicken to the skillet, add the remaining gluten-free soy sauce and water. Stir well to combine and cook for an additional 2 minutes until heated through.
- Serve hot, garnished with chopped green onions and sesame seeds.
