Ingredients

  • Chicken breast - 250 grams, sliced thinly
  • Button mushrooms - 150 grams, sliced
  • Broccoli florets - 100 grams
  • Red bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Water - 100 milliliters
  • Green onions - 2, chopped (for garnish)
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. In a bowl, combine sliced chicken breast with cornstarch and 1 tablespoon of gluten-free soy sauce. Toss to coat evenly and let marinate for 10 minutes.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 5-7 minutes until cooked through and golden brown. Remove chicken from the skillet and set aside.
  3. In the same skillet, add sesame oil, garlic, ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add sliced mushrooms, broccoli florets, and red bell pepper to the skillet. Stir-fry for another 3-4 minutes until vegetables are tender but still crisp.
  5. Return the cooked chicken to the skillet, add the remaining gluten-free soy sauce and water. Stir well to combine and cook for an additional 2 minutes until heated through.
  6. Serve hot, garnished with chopped green onions and sesame seeds.
