- Chicken breast - 250 grams, sliced thinly
- Eggplant - 1 medium, cut into bite-sized cubes
- Red bell pepper - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Gluten-free soy sauce - 3 tablespoons
- Oyster sauce (gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped for garnish
Steps
- In a bowl, mix the sliced chicken with cornstarch, salt, and pepper. Let it marinate for about 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the eggplant and red bell pepper to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Return the chicken to the skillet. Pour in the gluten-free soy sauce and oyster sauce, and drizzle with sesame oil. Stir well to combine all ingredients.
- Cook for an additional 2-3 minutes until everything is heated through and well coated with the sauce.
- Remove from heat and garnish with chopped green onions before serving.
