Ingredients

  • black sesame seeds - 30 grams
  • gluten-free all-purpose flour - 60 grams
  • granulated sugar - 40 grams
  • baking powder - 1 teaspoon
  • coconut milk - 100 milliliters
  • eggs - 1 large
  • vanilla extract - 1 teaspoon
  • vegetable oil - 2 tablespoons
  • salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small cake pan (approximately 15 cm in diameter).
  2. In a dry skillet over medium heat, toast the black sesame seeds for about 3-5 minutes until fragrant, then let them cool.
  3. Once cooled, grind the toasted black sesame seeds into a fine powder using a spice grinder or mortar and pestle.
  4. In a mixing bowl, combine the gluten-free all-purpose flour, ground black sesame seeds, baking powder, and salt; whisk to combine.
  5. In another bowl, whisk together the granulated sugar, coconut milk, egg, vegetable oil, and vanilla extract until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined and being careful not to overmix.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Slice and serve as desired, optionally garnished with additional toasted black sesame seeds or a dusting of powdered sugar.
