- Firm tofu - 200 grams
- Black beans (canned, drained and rinsed) - 1 cup (240 grams)
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Spring onions (chopped) - 2 stalks
- Bell pepper (sliced) - 1/2 medium
- Cornstarch - 1 tablespoon
- Water - 1/4 cup (60 ml)
- Black pepper - 1/4 teaspoon
- Chili flakes (optional) - 1/4 teaspoon
- Cilantro (for garnish) - a handful
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, mix the soy sauce, sesame oil, minced garlic, grated ginger, black pepper, and chili flakes.
- Add the tofu cubes to the marinade and let them sit for 10 minutes.
- Heat a non-stick skillet over medium-high heat and add the marinated tofu cubes. Cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the sliced bell pepper and cook for 2-3 minutes until slightly softened.
- Add the black beans and the water to the skillet, stirring to combine.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, then add it to the beans and bell pepper. Stir well and cook for another 2 minutes until the sauce thickens.
- Return the cooked tofu to the skillet and toss everything together until heated through.
- Garnish with chopped spring onions and cilantro before serving.
