Ingredients

  • Firm tofu - 200 grams
  • Black beans (canned, drained and rinsed) - 1 cup (240 grams)
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Spring onions (chopped) - 2 stalks
  • Bell pepper (sliced) - 1/2 medium
  • Cornstarch - 1 tablespoon
  • Water - 1/4 cup (60 ml)
  • Black pepper - 1/4 teaspoon
  • Chili flakes (optional) - 1/4 teaspoon
  • Cilantro (for garnish) - a handful

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. In a bowl, mix the soy sauce, sesame oil, minced garlic, grated ginger, black pepper, and chili flakes.
  3. Add the tofu cubes to the marinade and let them sit for 10 minutes.
  4. Heat a non-stick skillet over medium-high heat and add the marinated tofu cubes. Cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  5. In the same skillet, add the sliced bell pepper and cook for 2-3 minutes until slightly softened.
  6. Add the black beans and the water to the skillet, stirring to combine.
  7. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, then add it to the beans and bell pepper. Stir well and cook for another 2 minutes until the sauce thickens.
  8. Return the cooked tofu to the skillet and toss everything together until heated through.
  9. Garnish with chopped spring onions and cilantro before serving.
