  • Fresh clams - 500 grams

  • Red chili pepper - 1, thinly sliced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Coriander - for garnish

Steps

  1. Rinse the clams under cold water to remove any sand or grit.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and ginger to the pan, sautéing for about 30 seconds until fragrant.
  4. Stir in the sliced red chili pepper and cook for an additional 30 seconds.
  5. Add the cleaned clams to the pan, followed by the soy sauce and Shaoxing wine.
  6. Cover the pan and let the clams steam for 5-7 minutes, or until they have opened up.
