Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Cooked jasmine rice - 2 cups (about 300 grams)
  • Garlic - 4 cloves, minced
  • Green onions - 2, chopped
  • Carrot - 1 medium, diced
  • Frozen peas - 1/2 cup (75 grams)
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Egg - 1, beaten
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add the diced carrot and frozen peas. Sauté for 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble the egg until fully cooked.
  6. Add the cooked jasmine rice to the skillet, mixing everything together.
  7. Return the cooked shrimp to the skillet and add soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for another 2-3 minutes until heated through.
  8. Finally, stir in the chopped green onions and remove from heat. Serve hot.
