Ingredients
- Shrimp - 200 grams, peeled and deveined
- Cooked jasmine rice - 2 cups (about 300 grams)
- Garlic - 4 cloves, minced
- Green onions - 2, chopped
- Carrot - 1 medium, diced
- Frozen peas - 1/2 cup (75 grams)
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Egg - 1, beaten
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add the diced carrot and frozen peas. Sauté for 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble the egg until fully cooked.
- Add the cooked jasmine rice to the skillet, mixing everything together.
- Return the cooked shrimp to the skillet and add soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for another 2-3 minutes until heated through.
- Finally, stir in the chopped green onions and remove from heat. Serve hot.
