Ingredients

  • Prawns (peeled and deveined) - 300 grams
  • Jasmine rice - 150 grams
  • Garlic (minced) - 4 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Spring onions (sliced) - 2 stalks
  • Red chili (sliced, optional) - 1
  • Salt - to taste
  • Black pepper - to taste
  • Water - 300 ml

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 300 ml of water in a pot and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender. Remove from heat and let it sit covered for 5 minutes.
  2. While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Increase the heat to medium-high and add the prawns to the skillet. Cook for 2-3 minutes until they turn pink and opaque.
  4. Stir in the soy sauce, sesame oil, and sliced red chili (if using). Cook for an additional 1-2 minutes, then season with salt and black pepper to taste.
  5. Fluff the cooked rice with a fork and divide it between two plates. Top the rice with the garlic prawns and garnish with sliced spring onions.
