- Jasmine rice - 150 grams
- Water - 300 ml
- Garlic - 6 cloves, minced
- Vegetable oil - 2 tablespoons
- Green onions - 3, chopped
- Carrot - 1 medium, diced
- Frozen peas - 100 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Add the diced carrot and cook for another 3-4 minutes until tender.
- Stir in the frozen peas and chopped green onions, cooking for an additional 2 minutes until the peas are heated through.
- Fluff the cooked rice with a fork and add it to the skillet. Mix everything together well.
- Pour in the soy sauce and sesame oil, stirring to evenly coat the rice and vegetables. Season with salt and black pepper to taste.
- Cook for another 2-3 minutes, allowing the rice to fry slightly and form a bit of a crust.
- Serve hot, garnished with extra green onions if desired.
