Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Garlic - 6 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Green onions - 3, chopped
  • Carrot - 1 medium, diced
  • Frozen peas - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  3. While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat.
  4. Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  5. Add the diced carrot and cook for another 3-4 minutes until tender.
  6. Stir in the frozen peas and chopped green onions, cooking for an additional 2 minutes until the peas are heated through.
  7. Fluff the cooked rice with a fork and add it to the skillet. Mix everything together well.
  8. Pour in the soy sauce and sesame oil, stirring to evenly coat the rice and vegetables. Season with salt and black pepper to taste.
  9. Cook for another 2-3 minutes, allowing the rice to fry slightly and form a bit of a crust.
  10. Serve hot, garnished with extra green onions if desired.
