Ingredients

  • Almond flour - 200 grams
  • Coconut flour - 30 grams
  • Egg - 1 large
  • Water - 60 milliliters
  • Garlic - 3 cloves, minced
  • Chives - 50 grams, finely chopped
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Ground black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, and salt. Mix well.
  2. Add the egg and water to the dry ingredients and knead until a smooth dough forms. If the dough is too sticky, add a little more almond flour.
  3. Wrap the dough in plastic wrap and let it rest for 10 minutes.
  4. While the dough is resting, heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the chopped chives to the pan and cook for an additional minute. Season with black pepper and set aside to cool.
  6. On a floured surface, roll out the dough into a thin sheet, about 2-3 mm thick.
  7. Cut the rolled dough into circles using a cookie cutter or a glass, approximately 10 cm in diameter.
  8. Place a teaspoon of the garlic and chive mixture in the center of each dough circle.
  9. Fold the dough over to create a pocket and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
  10. Heat a non-stick skillet over medium heat and lightly grease it with olive oil.
  11. Cook the pockets in the skillet for about 3-4 minutes on each side, or until golden brown.
  12. Remove from the skillet and let cool slightly before serving.
