Ingredients

  • Eggs - 4 large
  • Garlic chives - 50 grams, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons
  • Sesame oil - 1 teaspoon

Steps

  1. In a mixing bowl, crack the eggs and whisk them until well combined. Add the finely chopped garlic chives, salt, and pepper to the eggs and mix until evenly distributed.
  2. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat until hot.
  3. Pour half of the egg mixture into the skillet, tilting the pan to ensure even coverage. Cook for about 2-3 minutes or until the edges start to set.
  4. Using a spatula, gently lift the edges of the omelette while tilting the pan to allow uncooked egg to flow underneath. Cook for an additional 1-2 minutes until mostly set but still slightly runny on top.
  5. Drizzle 1/2 teaspoon of sesame oil over the omelette and carefully fold it in half. Cook for another minute to allow the inside to firm up slightly.
  6. Slide the omelette onto a plate and repeat the process with the remaining egg mixture, adding the remaining coconut oil to the skillet if necessary.
  7. Serve warm, garnished with extra garlic chives if desired.
