Steps
- In a mixing bowl, crack the eggs and whisk them until well combined. Add the finely chopped garlic chives, salt, and pepper to the eggs and mix until evenly distributed.
- Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat until hot.
- Pour half of the egg mixture into the skillet, tilting the pan to ensure even coverage. Cook for about 2-3 minutes or until the edges start to set.
- Using a spatula, gently lift the edges of the omelette while tilting the pan to allow uncooked egg to flow underneath. Cook for an additional 1-2 minutes until mostly set but still slightly runny on top.
