Ingredients

  • Cooked Jasmine Rice - 2 cups
  • Boneless Chicken Breast - 200 grams, diced
  • Garlic - 4 cloves, minced
  • Green Onions - 2 stalks, chopped
  • Carrot - 1 small, diced
  • Frozen Peas - 1/2 cup
  • Soy Sauce - 3 tablespoons
  • Sesame Oil - 1 tablespoon
  • Vegetable Oil - 2 tablespoons
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the diced carrot and frozen peas. Stir-fry for 2-3 minutes until vegetables are tender.
  5. Add the cooked rice to the skillet, breaking up any clumps. Stir to combine with the vegetables.
  6. Pour in the soy sauce and sesame oil, stirring well to evenly coat the rice.
  7. Return the cooked chicken to the skillet, and add the chopped green onions. Stir-fry everything together for another 2-3 minutes.
  8. Taste and adjust seasoning with more salt or pepper if needed. Serve hot.
