Ingredients
- Cooked Jasmine Rice - 2 cups
- Boneless Chicken Breast - 200 grams, diced
- Garlic - 4 cloves, minced
- Green Onions - 2 stalks, chopped
- Carrot - 1 small, diced
- Frozen Peas - 1/2 cup
- Soy Sauce - 3 tablespoons
- Sesame Oil - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Salt - to taste
- Black Pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced carrot and frozen peas. Stir-fry for 2-3 minutes until vegetables are tender.
- Add the cooked rice to the skillet, breaking up any clumps. Stir to combine with the vegetables.
- Pour in the soy sauce and sesame oil, stirring well to evenly coat the rice.
- Return the cooked chicken to the skillet, and add the chopped green onions. Stir-fry everything together for another 2-3 minutes.
- Taste and adjust seasoning with more salt or pepper if needed. Serve hot.
