- Lamb shoulder, cubed - 300 grams
- Cauliflower rice - 200 grams
- Garlic, minced - 3 cloves
- Ginger, minced - 1 tablespoon
- Onion, finely chopped - 1 medium
- Cumin seeds - 1 teaspoon
- Coriander seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Coconut aminos - 2 tablespoons
- Olive oil - 2 tablespoons
- Fresh cilantro, chopped - 2 tablespoons
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and ginger to the skillet and cook for an additional 1-2 minutes until fragrant.
- Stir in the cumin seeds, coriander seeds, turmeric powder, paprika, salt, and black pepper. Cook for another minute to toast the spices.
- Add the cubed lamb to the skillet, stirring well to coat with the spice mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.
- Pour in the coconut aminos and reduce the heat to low. Cover and simmer for 15 minutes, allowing the lamb to become tender.
- Meanwhile, prepare the cauliflower rice by steaming or sautéing it in a separate pan until tender, about 5-7 minutes.
- To serve, place the cauliflower rice on plates, top with the lamb mixture, and garnish with fresh cilantro.
