Ingredients

  • Rice noodles - 200 grams

  • Broccoli florets - 100 grams
  • Green onions - 2, chopped
  • Soy sauce - 3 tablespoons
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish (optional)

Steps

  1. Soak the rice noodles in warm water for about 15 minutes until softened; drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper, julienned carrot, and broccoli florets; stir-fry for about 5-7 minutes until the vegetables are tender yet crisp.
  5. Add the soaked rice noodles to the skillet and toss well with the vegetables.
  6. In a small bowl, mix together the soy sauce, chili paste, sesame oil, salt, and black pepper; pour over the noodle mixture.
  7. Stir-fry everything together for another 3-5 minutes until the noodles are heated through and coated with the sauce.
  8. Remove from heat and garnish with chopped green onions and cilantro if desired. Serve hot.
