Steps
- Soak the rice noodles in warm water for about 15 minutes until softened; drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
- Add the sliced red bell pepper, julienned carrot, and broccoli florets; stir-fry for about 5-7 minutes until the vegetables are tender yet crisp.
- Add the soaked rice noodles to the skillet and toss well with the vegetables.
- In a small bowl, mix together the soy sauce, chili paste, sesame oil, salt, and black pepper; pour over the noodle mixture.
