- Chicken breast - 200 grams, sliced thinly
- Red bell pepper - 1, sliced
- Green bell pepper - 1, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Mushrooms - 100 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Gluten-free soy sauce - 3 tablespoons
- Chili oil - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Green onions - 2, chopped
- Salt - to taste
Steps
- In a bowl, marinate the sliced chicken breast with gluten-free soy sauce, cornstarch, and a pinch of salt for about 10 minutes.
- Heat a large skillet or wok over medium-high heat and add the chili oil.
- Add the marinated chicken to the skillet and stir-fry until cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add sesame oil, minced garlic, and ginger, and stir-fry for 30 seconds until fragrant.
- Add the sliced red and green bell peppers, carrot, zucchini, and mushrooms to the skillet. Stir-fry for about 5-6 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet and pour in 100 ml of water. Stir everything together and let it cook for an additional 2-3 minutes.
- Garnish with chopped green onions before serving.
