Ingredients

  • Chicken breast - 200 grams, sliced thinly
  • Red bell pepper - 1, sliced
  • Green bell pepper - 1, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Mushrooms - 100 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Gluten-free soy sauce - 3 tablespoons
  • Chili oil - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Green onions - 2, chopped
  • Salt - to taste

Steps

  1. In a bowl, marinate the sliced chicken breast with gluten-free soy sauce, cornstarch, and a pinch of salt for about 10 minutes.
  2. Heat a large skillet or wok over medium-high heat and add the chili oil.
  3. Add the marinated chicken to the skillet and stir-fry until cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. In the same skillet, add sesame oil, minced garlic, and ginger, and stir-fry for 30 seconds until fragrant.
  5. Add the sliced red and green bell peppers, carrot, zucchini, and mushrooms to the skillet. Stir-fry for about 5-6 minutes until the vegetables are tender-crisp.
  6. Return the cooked chicken to the skillet and pour in 100 ml of water. Stir everything together and let it cook for an additional 2-3 minutes.
  7. Garnish with chopped green onions before serving.
