- Soy sauce - 1 tablespoon
- Black pepper - to taste
- Vegetable oil - 2 tablespoons
- Coriander leaves - for garnish
Steps
- In a bowl, mix sweet potato starch with water until smooth to create the batter.
- Add the minced garlic, chopped spring onions, and black pepper to the batter, mixing well.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat.
- Pour half of the batter into the pan, spreading it evenly to form a base.
- Add half of the fresh oysters on top of the batter and let it cook for about 2-3 minutes until the bottom is set.
- Crack 2 eggs over the oysters and batter, gently spreading the eggs to cover. Cook for another 2-3 minutes until the eggs are set.
- Carefully flip the omelette to cook the other side for another 2 minutes, adding more oil if necessary.
- Repeat the process with the remaining batter and oysters to make the second omelette.
- Serve hot, drizzled with soy sauce and garnished with coriander leaves.
