Ingredients

  • Jasmine rice - 150g (uncooked)
  • Water - 300ml
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Shallots - 2 (finely chopped)
  • Carrot - 1 medium (diced)
  • Green peas - 50g (fresh or frozen)
  • Cooked chicken breast - 100g (diced, gluten-free)
  • Egg - 1 (beaten)
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Spring onions - 2 (chopped)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, bring 300ml of water to a boil. Add the soaked rice, reduce the heat to low, cover, and let it simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
  3. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and chopped shallots, sauté until fragrant and translucent.
  4. Add diced carrots and green peas to the skillet, stir-fry for about 3-4 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet, pour the beaten egg into the empty side, and scramble it until fully cooked.
  6. Add the diced cooked chicken to the skillet and mix everything together.
  7. Fluff the cooked rice with a fork and add it to the skillet, mixing well with the other ingredients.
  8. Pour in the gluten-free soy sauce and sesame oil, stirring to combine. Season with salt and black pepper to taste.
  9. Lastly, fold in the chopped spring onions and stir-fry for another 1-2 minutes.
  10. Serve hot and enjoy your authentic Fujian Fried Rice!
