Ingredients

  • Fresh mixed fruits (e.g., mango, kiwi, berries) - 150 grams
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Drain the silken tofu and place it in a blender.
  2. Add coconut milk, honey (or maple syrup), and vanilla extract to the blender and blend until smooth.
  3. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
  4. Pour the blended tofu mixture into a saucepan and heat over low heat, stirring constantly.
  5. Once warm, add the cornstarch slurry and continue to stir until the mixture thickens, about 3-5 minutes.
  6. Remove from heat and let it cool slightly.
  7. Pour the tofu mixture into serving bowls and refrigerate for at least 1 hour to set.
