- All-purpose flour - 100 grams
- Golden syrup - 50 grams
- Vegetable oil - 30 grams
- Baking soda - 1/4 teaspoon
- Water - 30 milliliters
- Red bean paste - 50 grams
- Assorted fresh fruits (such as mango, kiwi, and strawberries) - 100 grams, diced
- Sesame seeds - 1 tablespoon
Steps
- In a mixing bowl, combine the all-purpose flour, golden syrup, vegetable oil, baking soda, and water to form a smooth dough.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
- While the dough is resting, prepare the fruit filling by mixing the diced fresh fruits with the red bean paste in a separate bowl.
- After resting, divide the dough into 4 equal portions and shape each portion into a small ball.
- Flatten each ball into a disc and place a spoonful of the fruit and red bean paste mixture in the center.
- Carefully fold the edges of the dough over the filling and pinch to seal, shaping it into a round mooncake.
- Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
- Place the mooncakes on the prepared tray and gently brush the tops with a little vegetable oil, then sprinkle sesame seeds on top.
- Bake in the preheated oven for about 20-25 minutes, or until lightly golden.
- Allow the mooncakes to cool completely before serving.
