Steps
- Peel the taro root and slice it thinly (about 1-2 mm thick) using a mandoline slicer or a sharp knife.
- Soak the sliced taro in cold water for 10 minutes to remove excess starch, then drain and pat dry with paper towels.
- In a deep skillet or pot, heat the coconut oil over medium-high heat until it reaches 180°C (350°F).
- Carefully add the dried taro slices to the hot oil in batches, ensuring not to overcrowd the pan.
- Fry the taro slices for about 3-4 minutes, or until they turn golden brown and crispy, stirring occasionally.
- Use a slotted spoon to remove the fried taro chips and transfer them to a paper towel-lined plate to drain excess oil.
