Ingredients

  • Cooked Jasmine rice - 2 cups
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Green peas - 1/2 cup
  • Bell pepper, diced - 1/2 medium
  • Green onions, chopped - 3 stalks
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the diced carrot and bell pepper, cooking for 3-4 minutes until they begin to soften.
  4. Add the green peas and continue to stir-fry for another 2 minutes.
  5. Push the vegetables to the side of the pan and add the remaining tablespoon of vegetable oil.
  6. Add the cooked rice to the pan, breaking up any clumps with a spatula.
  7. Pour the soy sauce and sesame oil over the rice, mixing thoroughly to combine all the ingredients.
  8. Add the chopped green onions, and season with salt and pepper to taste.
  9. Cook for an additional 2-3 minutes, stirring occasionally until the rice is heated through and slightly crispy.
  10. Remove from heat and serve immediately.
