Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Cauliflower rice - 2 cups
  • Carrot - 1 medium, diced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Egg - 2, beaten
  • Coconut aminos - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
  3. Add the diced carrot and cook for 3-4 minutes until softened.
  4. Push the vegetables to one side of the skillet and add the shrimp to the other side. Cook for 3-4 minutes until the shrimp turn pink and opaque.
  5. Pour in the beaten eggs and scramble them until fully cooked, then mix everything together.
  6. Add the cauliflower rice, coconut aminos, salt, and black pepper. Stir-fry for another 5-7 minutes until the cauliflower is tender.
  7. Finally, stir in the chopped green onions and cook for an additional minute before serving.
