- Carrot - 1 medium, diced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Egg - 2, beaten
- Coconut aminos - 2 tablespoons
- Olive oil - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add the diced carrot and cook for 3-4 minutes until softened.
- Push the vegetables to one side of the skillet and add the shrimp to the other side. Cook for 3-4 minutes until the shrimp turn pink and opaque.
