- Cooked Jasmine rice - 2 cups (preferably day-old)
- Eggs - 2 large
- Vegetable oil - 2 tablespoons
- Green onions (chopped) - 2 tablespoons
- Carrots (diced) - 1/2 cup
- Frozen peas - 1/2 cup
- Soy sauce - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.
- Beat the eggs in a bowl and pour them into the skillet, scrambling until fully cooked. Remove the eggs and set aside.
- In the same skillet, add the remaining tablespoon of oil and sauté the chopped green onions and diced carrots for about 2-3 minutes until softened.
- Add the frozen peas to the skillet and stir for another 2 minutes.
- Add the cooked rice to the skillet, breaking up any clumps, and stir everything together.
- Pour the soy sauce over the rice mixture, and season with salt and black pepper. Stir-fry everything for 3-4 minutes until heated through.
- Finally, add the scrambled eggs back into the skillet, mixing them well with the rice. Serve hot.
