Ingredients

  • Cooked Jasmine rice - 2 cups (preferably day-old)
  • Eggs - 2 large
  • Vegetable oil - 2 tablespoons
  • Green onions (chopped) - 2 tablespoons
  • Carrots (diced) - 1/2 cup
  • Frozen peas - 1/2 cup
  • Soy sauce - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.
  2. Beat the eggs in a bowl and pour them into the skillet, scrambling until fully cooked. Remove the eggs and set aside.
  3. In the same skillet, add the remaining tablespoon of oil and sauté the chopped green onions and diced carrots for about 2-3 minutes until softened.
  4. Add the frozen peas to the skillet and stir for another 2 minutes.
  5. Add the cooked rice to the skillet, breaking up any clumps, and stir everything together.
  6. Pour the soy sauce over the rice mixture, and season with salt and black pepper. Stir-fry everything for 3-4 minutes until heated through.
  7. Finally, add the scrambled eggs back into the skillet, mixing them well with the rice. Serve hot.
