Ingredients

  • Cooked rice - 2 cups (preferably day-old)
  • Chicken breast - 200 grams, diced
  • Green peas - 1/2 cup
  • Carrot - 1 medium, diced
  • Egg - 1 large
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Spring onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium heat.
  2. Add diced chicken to the pan and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same pan, add the remaining tablespoon of oil and garlic. Sauté for about 30 seconds until fragrant.
  4. Add the diced carrot and green peas, cooking for 3-4 minutes until tender.
  5. Push the vegetables to one side of the pan and crack the egg into the empty side. Scramble the egg until fully cooked.
  6. Add the cooked rice to the pan, combining it with the vegetables and scrambled egg.
  7. Return the cooked chicken to the pan, then pour in the soy sauce, mixing everything thoroughly.
  8. Season with salt and pepper to taste, and stir-fry for an additional 2-3 minutes.
  9. Garnish with chopped spring onions before serving.
