Ingredients

  • Jasmine rice - 1 cup (uncooked)
  • Water - 1.5 cups
  • Vegetable oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup, frozen
  • Egg - 1 large, beaten
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onions - 2, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Rice paper wrappers - 6 sheets
  • Oil for frying - as needed

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine with 1.5 cups of water in a pot and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed.
  2. While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add minced garlic and ginger, sautéing for 1 minute until fragrant.
  3. Add diced carrots and peas to the skillet and cook for 3-4 minutes until softened. Push the vegetables to one side of the skillet and pour in the beaten egg, scrambling it until fully cooked.
  4. Mix the rice into the skillet, add soy sauce, sesame oil, chopped spring onions, salt, and pepper. Stir well to combine and cook for another 2-3 minutes. Remove from heat and let it cool slightly.
  5. Once the filling has cooled, prepare the rice paper wrappers by soaking them in warm water for about 10 seconds until pliable. Place a wrapper on a clean surface and spoon 2-3 tablespoons of fried rice filling onto the lower third of the wrapper.
  6. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.
  7. In a deep frying pan, heat oil over medium heat until hot. Fry the rolls in batches for about 3-4 minutes or until golden brown and crispy. Drain on paper towels.
  8. Serve the Fried Rice Rolls warm with soy sauce or sweet chili sauce for dipping.
