- Jasmine rice - 1 cup (uncooked)
- Water - 1.5 cups
- Vegetable oil - 2 tablespoons
- Carrot - 1 medium, diced
- Green peas - 1/2 cup, frozen
- Egg - 1 large, beaten
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onions - 2, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Rice paper wrappers - 6 sheets
- Oil for frying - as needed
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine with 1.5 cups of water in a pot and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed.
- While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add minced garlic and ginger, sautéing for 1 minute until fragrant.
- Add diced carrots and peas to the skillet and cook for 3-4 minutes until softened. Push the vegetables to one side of the skillet and pour in the beaten egg, scrambling it until fully cooked.
- Mix the rice into the skillet, add soy sauce, sesame oil, chopped spring onions, salt, and pepper. Stir well to combine and cook for another 2-3 minutes. Remove from heat and let it cool slightly.
- Once the filling has cooled, prepare the rice paper wrappers by soaking them in warm water for about 10 seconds until pliable. Place a wrapper on a clean surface and spoon 2-3 tablespoons of fried rice filling onto the lower third of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.
- In a deep frying pan, heat oil over medium heat until hot. Fry the rolls in batches for about 3-4 minutes or until golden brown and crispy. Drain on paper towels.
- Serve the Fried Rice Rolls warm with soy sauce or sweet chili sauce for dipping.
