Ingredients

  • Rice noodles - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Cabbage - 100 grams, shredded
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sesame oil - 1 teaspoon
  • Egg - 1, beaten
  • Salt - to taste
  • Black pepper - to taste
  • Optional protein (tofu or shrimp) - 100 grams

Steps

  1. Soak the rice noodles in hot water for about 10 minutes until softened, then drain and set aside.
  2. In a large frying pan or wok, heat the vegetable oil over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the julienned carrot and sliced bell pepper, stir-frying for about 3-4 minutes until slightly tender.
  5. Add the chopped green onion and shredded cabbage, cooking for another 2-3 minutes until the cabbage wilts.
  6. Push the vegetables to the sides of the pan and pour in the beaten egg in the center. Scramble the egg until fully cooked.
  7. Add the soaked rice noodles to the pan along with the gluten-free soy sauce and sesame oil. Toss everything together gently to combine.
  8. If using, add your choice of protein (tofu or shrimp) and stir-fry for another 2-3 minutes until heated through.
  9. Season with salt and black pepper to taste, then serve hot.
