- Rice noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Cabbage - 100 grams, shredded
- Soy sauce (gluten-free) - 3 tablespoons
- Sesame oil - 1 teaspoon
- Egg - 1, beaten
- Salt - to taste
- Black pepper - to taste
- Optional protein (tofu or shrimp) - 100 grams
Steps
- Soak the rice noodles in hot water for about 10 minutes until softened, then drain and set aside.
- In a large frying pan or wok, heat the vegetable oil over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper, stir-frying for about 3-4 minutes until slightly tender.
- Add the chopped green onion and shredded cabbage, cooking for another 2-3 minutes until the cabbage wilts.
- Push the vegetables to the sides of the pan and pour in the beaten egg in the center. Scramble the egg until fully cooked.
- Add the soaked rice noodles to the pan along with the gluten-free soy sauce and sesame oil. Toss everything together gently to combine.
- If using, add your choice of protein (tofu or shrimp) and stir-fry for another 2-3 minutes until heated through.
- Season with salt and black pepper to taste, then serve hot.
