- Bell pepper - 50 grams, finely diced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cornstarch - 2 tablespoons
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Oil for frying - 2 tablespoons
Steps
- In a large bowl, combine the cooked jasmine rice, diced carrot, chopped green onions, and diced bell pepper.
- In a small bowl, beat the egg, then add it to the rice mixture along with soy sauce, sesame oil, cornstarch, salt, and black pepper. Mix well until all ingredients are combined.
- Heat 1 tablespoon of oil in a non-stick skillet over medium heat.
- Scoop about 1/4 cup of the rice mixture into the skillet, pressing it down to form a cake. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
- Cook for about 4-5 minutes on each side until the rice cakes are golden brown and crispy. Add more oil as needed between batches.
- Remove the rice cakes from the skillet and drain on paper towels. Serve warm.
