Ingredients

  • Cooked jasmine rice - 200 grams
  • Egg - 1 large
  • Carrot - 50 grams, finely diced
  • Green onions - 30 grams, chopped
  • Bell pepper - 50 grams, finely diced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oil for frying - 2 tablespoons

Steps

  1. In a large bowl, combine the cooked jasmine rice, diced carrot, chopped green onions, and diced bell pepper.
  2. In a small bowl, beat the egg, then add it to the rice mixture along with soy sauce, sesame oil, cornstarch, salt, and black pepper. Mix well until all ingredients are combined.
  3. Heat 1 tablespoon of oil in a non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the rice mixture into the skillet, pressing it down to form a cake. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
  5. Cook for about 4-5 minutes on each side until the rice cakes are golden brown and crispy. Add more oil as needed between batches.
  6. Remove the rice cakes from the skillet and drain on paper towels. Serve warm.
