Ingredients

  • Brown rice - 1 cup (cooked)
  • Carrot - 1 medium, finely chopped
  • Green peas - 1/2 cup
  • Spring onion - 2 stalks, finely chopped
  • Egg - 1 large, beaten
  • Low-sodium soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Panko breadcrumbs - 1/2 cup
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the cooked brown rice, finely chopped carrot, green peas, spring onion, beaten egg, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. With wet hands, form the rice mixture into small balls, approximately the size of a golf ball.
  3. Roll each rice ball in panko breadcrumbs until fully coated.
  4. Heat olive oil in a frying pan over medium heat. Once hot, add the rice balls in batches, being careful not to overcrowd the pan.
  5. Fry the rice balls for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  6. Serve hot with extra soy sauce or your favorite dipping sauce.
