Ingredients

  • Rice noodles - 200 grams

  • Egg - 2, beaten
  • Soy sauce - 2 tablespoons (ensure kosher)
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Sweet chili sauce - for serving

Steps

  1. Soak the rice noodles in warm water for about 15 minutes until soft, then drain and set aside.
  2. In a large bowl, combine the softened noodles, julienned carrot, chopped green onion, beaten eggs, soy sauce, sesame oil, salt, and black pepper. Mix well to combine all ingredients.
  3. Take a portion of the noodle mixture and place it on a sheet of parchment paper, then roll it tightly into a cylinder shape. Repeat with the remaining mixture.
  4. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully add the noodle rolls and fry until golden brown and crispy, about 4-5 minutes on each side.
  5. Remove the rolls from the pan and place them on paper towels to drain any excess oil.
  6. Slice the fried noodle rolls into bite-sized pieces and serve hot with sweet chili sauce on the side.
