Steps
- Soak the rice noodles in warm water for about 15 minutes until soft, then drain and set aside.
- In a large bowl, combine the softened noodles, julienned carrot, chopped green onion, beaten eggs, soy sauce, sesame oil, salt, and black pepper. Mix well to combine all ingredients.
- Take a portion of the noodle mixture and place it on a sheet of parchment paper, then roll it tightly into a cylinder shape. Repeat with the remaining mixture.
