Ingredients

  • Ripe bananas - 2 medium
  • Spring roll wrappers - 4 pieces
  • Granulated sugar - 2 tablespoons

  • Vanilla extract - 1/2 teaspoon
  • Vegetable oil (for frying) - 1 cup
  • Powdered sugar (for dusting) - 1 tablespoon

Steps

  1. Peel the ripe bananas and mash them in a bowl until smooth.
  2. Add granulated sugar, cinnamon, and vanilla extract to the mashed bananas and mix well.
  3. Lay a spring roll wrapper on a clean surface with one corner pointing towards you.
  4. Place about 2 tablespoons of the banana mixture in the center of the wrapper.
  5. Fold the bottom corner over the filling, then fold in the sides and roll it up tightly. Seal the edge with a little water.
  6. Repeat the process with the remaining wrappers and filling.
  7. In a deep pan, heat vegetable oil over medium heat until hot (about 180°C or 350°F).
  8. Carefully add the banana rolls to the hot oil, frying them in batches until golden brown, about 2-3 minutes per side.
  9. Remove the fried rolls and place them on a paper towel-lined plate to drain excess oil.
  10. Dust with powdered sugar before serving and enjoy warm.
