Steps
- Peel the ripe bananas and mash them in a bowl until smooth.
- Add granulated sugar, cinnamon, and vanilla extract to the mashed bananas and mix well.
- Lay a spring roll wrapper on a clean surface with one corner pointing towards you.
- Place about 2 tablespoons of the banana mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll it up tightly. Seal the edge with a little water.
- Repeat the process with the remaining wrappers and filling.
- In a deep pan, heat vegetable oil over medium heat until hot (about 180°C or 350°F).
- Carefully add the banana rolls to the hot oil, frying them in batches until golden brown, about 2-3 minutes per side.
- Remove the fried rolls and place them on a paper towel-lined plate to drain excess oil.
- Dust with powdered sugar before serving and enjoy warm.
