  • Carrot - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Zucchini - 100 grams, diced
  • Mushrooms - 100 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chinese five spice powder - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Cilantro - for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the diced carrots, red bell pepper, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.
  4. Stir in the sliced mushrooms and continue cooking for another 3 minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, reduce the heat and add the soy sauce and Chinese five spice powder. Simmer for 10 minutes.
  7. Taste the soup and add salt and pepper as needed.
  8. Serve hot, garnished with chopped green onions and cilantro.
