- Zucchini - 100 grams, diced
- Mushrooms - 100 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Chinese five spice powder - 1 teaspoon
- Green onions - 2 stalks, chopped
- Cilantro - for garnish
- Salt - to taste
- Pepper - to taste
Steps
- In a large pot, heat the sesame oil over medium heat.
- Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the diced carrots, red bell pepper, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the sliced mushrooms and continue cooking for another 3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat and add the soy sauce and Chinese five spice powder. Simmer for 10 minutes.
- Taste the soup and add salt and pepper as needed.
- Serve hot, garnished with chopped green onions and cilantro.
