Ingredients

  • Firm tofu - 200 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Five spice powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Green onions - 2, chopped
  • Spinach - 100 grams
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  3. Add the sliced carrots and mushrooms to the pot and cook for another 4-5 minutes until they begin to soften.
  4. Pour in the vegetable broth and bring to a boil, then reduce to a simmer.
  5. Stir in the soy sauce, five spice powder, and season with salt and black pepper to taste.
  6. Add the tofu cubes and spinach to the pot, cooking for an additional 5-7 minutes until the spinach is wilted and the tofu is heated through.
  7. Serve the soup hot, garnished with chopped green onions.
