- Cucumber - 50 grams, thinly sliced
- Red cabbage - 50 grams, shredded
- Avocado - 1, sliced
- Vegan mayonnaise - 2 tbsp
- Chili sauce - 1 tsp (optional)
- Coriander leaves - a handful, for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a grill or a non-stick skillet over medium-high heat.
- In a bowl, combine soy sauce, five-spice powder, minced garlic, grated ginger, and sesame oil to make a marinade.
- Add the portobello mushrooms to the marinade, ensuring they are well coated. Let them marinate for 10 minutes.
- While the mushrooms are marinating, prepare the toppings: slice the cucumber, shred the red cabbage, and slice the avocado.
- After marinating, place the mushrooms on the grill or skillet, cooking for about 5-7 minutes on each side until tender and grill marks appear.
- Toast the whole wheat burger buns on the grill or in a toaster until lightly browned.
