Ingredients

  • Portobello mushrooms - 2 large
  • Soy sauce - 30 ml
  • Five-spice powder - 1 tsp
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Sesame oil - 1 tbsp
  • Whole wheat burger buns - 2
  • Cucumber - 50 grams, thinly sliced
  • Red cabbage - 50 grams, shredded
  • Avocado - 1, sliced
  • Vegan mayonnaise - 2 tbsp
  • Chili sauce - 1 tsp (optional)
  • Coriander leaves - a handful, for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or a non-stick skillet over medium-high heat.
  2. In a bowl, combine soy sauce, five-spice powder, minced garlic, grated ginger, and sesame oil to make a marinade.
  3. Add the portobello mushrooms to the marinade, ensuring they are well coated. Let them marinate for 10 minutes.
  4. While the mushrooms are marinating, prepare the toppings: slice the cucumber, shred the red cabbage, and slice the avocado.
  5. After marinating, place the mushrooms on the grill or skillet, cooking for about 5-7 minutes on each side until tender and grill marks appear.
  6. Toast the whole wheat burger buns on the grill or in a toaster until lightly browned.
  7. Spread vegan mayonnaise on the bottom half of each bun, then layer with red cabbage, the grilled mushroom, cucumber slices, and avocado.
  8. Drizzle with chili sauce if desired, and top with coriander leaves before placing the top bun.
