Ingredients
- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Bell pepper - 1 small, diced
- Carrot - 1 medium, diced
- Green onion - 2 stalks, chopped
- Soy sauce - 2 tablespoons (or tamari for gluten-free)
- Chinese five spice powder - 1 teaspoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Remove the leaves and stem from the cauliflower, then cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the diced bell pepper and carrot to the skillet, and stir-fry for 3-4 minutes until the vegetables start to soften.
- Stir in the cauliflower rice and mix well with the vegetables. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Add the soy sauce, five spice powder, sesame oil, salt, and black pepper. Mix well to combine all the flavors, and cook for an additional 2-3 minutes.
- Remove from heat and stir in the chopped green onions before serving.
