Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Bell pepper - 1 small, diced
  • Carrot - 1 medium, diced
  • Green onion - 2 stalks, chopped
  • Soy sauce - 2 tablespoons (or tamari for gluten-free)
  • Chinese five spice powder - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Remove the leaves and stem from the cauliflower, then cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
  4. Add the diced bell pepper and carrot to the skillet, and stir-fry for 3-4 minutes until the vegetables start to soften.
  5. Stir in the cauliflower rice and mix well with the vegetables. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  6. Add the soy sauce, five spice powder, sesame oil, salt, and black pepper. Mix well to combine all the flavors, and cook for an additional 2-3 minutes.
  7. Remove from heat and stir in the chopped green onions before serving.
