Ingredients

  • White fish fillets (e.g., cod or sole) - 300 grams
  • Black bean sauce - 3 tablespoons
  • Soy sauce (low sodium) - 1 tablespoon
  • Fresh ginger (grated) - 1 teaspoon
  • Garlic (minced) - 2 cloves
  • Green onions (chopped) - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Water - 100 milliliters
  • Cornstarch - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Rinse the fish fillets under cold water and pat them dry with paper towels. Season them lightly with black pepper.
  2. In a small bowl, mix the black bean sauce, soy sauce, grated ginger, minced garlic, and water. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the sliced bell pepper and julienned carrot, and stir-fry for about 3-4 minutes until slightly tender.
  4. Push the vegetables to the side of the skillet and add the seasoned fish fillets. Cook for about 3-4 minutes on each side until the fish is cooked through and flakes easily with a fork.
  5. Pour the black bean sauce mixture over the fish and vegetables. Stir gently to combine and coat everything in the sauce. Bring to a simmer and let cook for an additional 2-3 minutes.
  6. If the sauce is too thin, mix cornstarch with a little water to create a slurry, then add it to the skillet and stir until the sauce thickens.
  7. Drizzle the sesame oil over the dish and sprinkle with chopped green onions before serving.
