Ingredients

  • Fish head (cleaned and halved) - 500 grams
  • Water - 1 liter
  • Ginger (sliced) - 20 grams
  • Garlic (smashed) - 3 cloves
  • Green onions (chopped) - 2 stalks
  • Tomatoes (quartered) - 1 medium
  • Carrot (sliced) - 1 small
  • Salt - 1 teaspoon
  • White pepper - 1/2 teaspoon
  • Soy sauce (Halal) - 1 tablespoon
  • Cilantro (for garnish) - a handful

Steps

  1. In a large pot, bring 1 liter of water to a boil.
  2. Add the fish head to the boiling water and let it cook for 5 minutes.
  3. Carefully remove the fish head and set it aside. Discard the water and any impurities.
  4. In the same pot, add fresh water (1 liter), ginger, garlic, and green onions. Bring to a boil.
  5. Once boiling, add the fish head back into the pot along with the tomatoes and carrot.
  6. Season with salt and white pepper, then reduce the heat to a simmer.
  7. Cover the pot and let it cook for 25-30 minutes, allowing the flavors to meld.
  8. Once done, taste and adjust seasoning if necessary. Serve hot, garnished with cilantro.
