Ingredients
- Fish head (cleaned and halved) - 500 grams
- Water - 1 liter
- Ginger (sliced) - 20 grams
- Garlic (smashed) - 3 cloves
- Green onions (chopped) - 2 stalks
- Tomatoes (quartered) - 1 medium
- Carrot (sliced) - 1 small
- Salt - 1 teaspoon
- White pepper - 1/2 teaspoon
- Soy sauce (Halal) - 1 tablespoon
- Cilantro (for garnish) - a handful
Steps
- In a large pot, bring 1 liter of water to a boil.
- Add the fish head to the boiling water and let it cook for 5 minutes.
- Carefully remove the fish head and set it aside. Discard the water and any impurities.
- In the same pot, add fresh water (1 liter), ginger, garlic, and green onions. Bring to a boil.
- Once boiling, add the fish head back into the pot along with the tomatoes and carrot.
- Season with salt and white pepper, then reduce the heat to a simmer.
- Cover the pot and let it cook for 25-30 minutes, allowing the flavors to meld.
- Once done, taste and adjust seasoning if necessary. Serve hot, garnished with cilantro.
